Red Pepper Hummus

This hummus has just a hint of spice, plus plenty of rich red pepper flavor. Its orange-red color makes it look festive on a plate!

Ingredients

  • 2 cups canned chickpeas, drained
  • 1/4 cup tahini
  • 2 tablespoons olive oil
  • 1 clove garlic
  • 1 jarred roasted red pepper, drained
  • the juice of one lemon
  • a pinch of salt

Combine all of the ingredients above in a food processor. Pulse the food processor a few times to start the grinding process, and then let it grind until the hummus has a smooth consistency. Scrape the sides down, grind for a few seconds longer, and then scoop your hummus into a bowl to serve.

Three-Herb and Onion Hummus

Fresh herbs not only give this hummus plenty of flavor, but also add little specks of green, adding to its visual appeal.

Ingredients:

  • 2 cups canned chickpeas, drained
  • 1/2 of a medium onion
  • 3 tablespoons olive oil, plus an additional tablespoon for sauteeing the onion
  • a pinch of salt
  • the juice of one lemon
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh basil

Slice the onion thinly, and place it in a skillet with 1 tablespoon of olive oil. Cook over medium heat until caramelized. Let cool to room temperature.

Combine the cooked onion, chickpeas, 3 tablespoons of olive oil, lemon juice, and salt in the food processor. Pulse a few times, and then grind until smooth. Scoop the hummus into a bowl, and then stir in the fresh herbs before serving.

Garlic and Tomato Hummus

Sundried tomatoes add a hint of sweetness to this delectable garlic hummus.

Ingredients:

  • 2 cups canned chickpeas, drained
  • 2 tablespoons tahini
  • 2 cloves garlic, minced
  • the juice of one lemon
  • 1/4 cup sundried tomatoes, chopped roughly
  • a pinch of salt
  • 2 good grinds of black pepper

Place all of the ingredients except for the tomatoes in the food processor. Pulse a few times, and then grind until smooth. Add the tomatoes, and pulse a few times just until they are chopped finely. Scoop the hummus into a bowl, and enjoy!
